2. Operating points

(2) Caviar raw materials: Choose intact and fresh ovaries for the production of caviar, and through the stereotype treatment, otherwise it will cause the caviar to break or dehydrate and shrink and affect the value of the finished product.

The stereotypes are processed in vivo and in vitro. In vivo stereotyping refers to the method of treating fresh fish caught, treated with ice and 10 to 12 Baume brine or 10% saline, which can keep fresh and shorten the setting time. In vitro styling refers to the removal of mature caviar from the fresh fish body, while taking it into 8 waves of brine, soaking for 4 hours, and then rinsing after setting.

(3) Salting: The salting process is also a very important part. The salting time is generally 2 to 20 minutes. The salting time should be determined according to the size, quality and final salt concentration of the fish.

(4) Draining and drying: After salting, the caviar is placed on a mat and drained to dry, and then collected and stored (frozen storage) for easy access.

(5) Filling and inspection: Finally, after a series of processing techniques, semi-finished products are filled and sterilized in a sterilization pot (sterilization formula: 15-30~15'/110 °C), vacuum-packed finished products, in cooling test Qualified after the deposit.
